Masala Dosa
IndiaTamilMumbai (formerly Bombay)
Masala Dosa is my absolute favorite! It's crispy, savory, and comforting — the perfect blend of South Indian flavors. The golden fermented crepe with spiced potato filling is a breakfast staple that feels like home.
Ingredients (for 8–10 dosas)
For the Dosa Batter:
- 3 cups idli rice (or parboiled rice)
- 1 cup urad dal (split black gram)
- 1 tsp fenugreek seeds (methi)
- Salt to taste
- Water as needed
For the Potato Masala Filling:
- 4–5 medium potatoes, boiled and mashed
- 2 onions, finely sliced
- 2–3 green chilies, chopped
- 1 tsp mustard seeds
- 1 tsp chana dal
- 8–10 curry leaves
- 1 tsp ginger, grated
- ½ tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves
To Serve:
- Coconut chutney
- Sambar
- Ghee or oil for cooking
How to Make It (Step-by-Step)
- Prepare the Batter: (Night Before) Soak rice + fenugreek seeds and urad dal separately for 4–6 hours. Grind urad dal to a fluffy paste, then rice to a slightly coarse paste. Mix both with salt and let ferment overnight (8–12 hours) in a warm place until it rises and turns slightly sour.

- Make the Potato Masala: Heat oil in a pan. Add mustard seeds, chana dal, curry leaves, ginger, and green chilies. Sauté sliced onions until soft. Add turmeric, salt, and mashed potatoes. Mix well and cook for 5 minutes. Garnish with coriander. Keep aside.

- Cook the Dosa: Heat a cast-iron tawa (griddle) on medium-high. Pour a ladle of batter and spread it thinly in a circular motion. Drizzle oil or ghee around the edges. Cook until golden and crispy on the bottom.

- Assemble: Place a generous spoonful of potato masala in the center. Fold the dosa in half or into a triangle. Serve hot with coconut chutney and steaming sambar.
Pro Tip: For extra crispiness, add a little rice flour to the batter or cook on high heat briefly.
This recipe brings back memories of weekend mornings with family! It's naturally gluten-free and can be made vegan.
