Lohikeitto (Creamy Salmon Soup)

FinlandFinnishHelsinki

Hei! Out of all Finnish dishes, Lohikeitto is my absolute favorite. It’s comforting, fresh, and full of Nordic flavor — perfect for any season!

Ingredients (for 4–6 people)

  • 500g fresh salmon fillet (skinless, cut into chunks)

  • 4–5 medium potatoes, peeled and cubed

  • 2 carrots, sliced

  • 1 large onion, chopped

  • 1 liter fish or vegetable stock

  • 2 cups whole milk (or heavy cream for richer version)

  • 2–3 tbsp butter

  • Fresh dill (a big handful, chopped)

  • 1 bay leaf

  • Salt, white pepper, and a pinch of allspice

  • Lemon wedges for serving

How to Make It (Step by Step)

  1. Sauté the base: Melt butter in a large pot. Add chopped onion and sauté until soft and translucent (about 5 minutes).

  2. Add vegetables:Add cubed potatoes, sliced carrots, bay leaf, and allspice. Pour in the stock and bring to a gentle boil. Simmer for 10–15 minutes until vegetables start to soften.

  3. Add salmon: Add the salmon chunks and simmer gently for another 5–7 minutes until the fish is just cooked.

  4. Make it creamy: Pour in the milk or cream. Heat through (do not boil vigorously). Season with salt and white pepper to taste.

  5. Finish with dill: Remove from heat and stir in plenty of fresh chopped dill. Let it rest for a couple of minutes.

  6. Serve: Ladle into bowls, garnish with more dill and a squeeze of lemon. Serve with fresh rye bread.

It’s simple, nourishing, and tastes like home! 😊
