Machboos
Machboos is the national dish of the UAE — fragrant spiced rice with tender meat, dried lime, and aromatic spices. It’s the one I always look forward to during family gatherings!
Ingredients (Serves 6–8)
For the meat:
- 1.5 kg chicken (or lamb), cut into pieces
- 2–3 dried black limes (loomi)
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4–5 garlic cloves, minced
- 2 tbsp tomato paste
- Spices: 2 tsp each of turmeric, cumin, coriander, cardamom + 1 cinnamon stick + salt & black pepper
- Ghee or vegetable oil
For the rice:
- 4 cups basmati rice (soaked 30 mins)
- Pinch of saffron soaked in rose water (optional but traditional)
- Fresh coriander & parsley for garnish
Step-by-Step Method
- Cook the Meat: Heat ghee/oil in a large pot. Fry onions until golden. Add garlic, then the meat pieces and brown them.
2. Build the Sauce: Add tomatoes, tomato paste, all spices, and dried limes (pierced with a knife). Add water to cover the meat and simmer for 45–60 minutes (chicken) or longer for lamb until very tender.
3. Cook the Rice: Remove the meat from the broth. Use the flavourful broth to cook the soaked rice. Add saffron-rose water mixture for beautiful colour and aroma.
4. Final Touch: Place the meat on top of the rice, cover, and let it steam on low heat for 10–15 minutes so the flavours meld.
5. Serve: Turn onto a large platter. Garnish with fried onions, fresh herbs, and extra dried lime. Traditionally served with Arabic salad, yogurt, and date chutney.

Tip: The secret is patience — slow cooking brings out the deep, aromatic flavours.
