My Favorite Traditional Dutch Recipe: Stamppot Boerenkool

NetherlandsDutchWillemstad

The Netherlands has many traditional dishes. But my favorite is Boerenkoolstamppot (kale mashed potatoes). It is simple, filling, and warms you up on cold evenings. No winter Sunday is complete without it.

My Favorite: Boerenkoolstamppot (Kale Mashed Potatoes)

1. Ingredients and Preparation

  • Potatoes: 1 kg (floury type)
  • Kale (boerenkool): 500g (chopped)
  • Smoked sausage (rookworst): 4 sausages
  • Bacon bits: 150g
  • Butter: 50g
  • Milk: ½ cup (warm)
  • Nutmeg, salt, pepper
  • Mustard for serving

2. Cook and Mash

  • Peel and cut potatoes into chunks
  • Put potatoes in pot, add kale on top (do not mix)
  • Boil 20 minutes until potatoes soft
  • Drain, add butter, warm milk, nutmeg, salt, pepper
  • Mash together until smooth but textured
  • While cooking: fry bacon bits crispy, heat sausages

3. Serve

  • Fold crispy bacon bits into stamppot
  • Place smoked sausage on top (make a small well)
  • Serve with mustard on the side
  • Add gravy if desired
