My Favorite Traditional Romanian Recipe: Sarmale (Cabbage Rolls)

RomaniaRomanianBucharest

Romania has many famous dishes. But my favorite is Sarmale (cabbage rolls). It is slow-cooked, flavorful, and made with love. No Sunday lunch or Christmas dinner is complete without them.

1. Prepare the Cabbage

  • 1 large head of pickled cabbage (or fresh, boiled until soft)
  • Separate leaves carefully (do not tear)
  • Cut out thick stem from each leaf

2. Make the Filling

  • 1 kg minced pork (mixed with beef optional)
  • 200g rice (uncooked)
  • 2 onions (finely chopped, fried golden)
  • 2 tbsp tomato paste
  • Salt, pepper, thyme, dill (to taste)

Mix all ingredients in a large bowl.

3. Roll the Sarmale

  • Place 1 tbsp filling on each cabbage leaf
  • Fold sides over, roll tightly
  • Layer in a large pot with smoked meat (bacon or ribs) between layers
  • Add tomato sauce (water + tomato paste)

4. Cook and Serve

  • Cover with water or tomato sauce
  • Cook 2-3 hours on low heat (until cabbage is soft and rice cooked)
  • Serve with polenta (mămăligă) and sour cream

Cultural Significance

  • Sarmale are one of Romania’s most iconic traditional dishes, often considered a symbol of hospitality and home cooking.
  • They are commonly served at Christmas, Easter, weddings, and major family celebrations, where large pots are prepared to feed guests.
  • The dish reflects Romania’s Ottoman and Balkan influences, but over time it became deeply rooted in Romanian identity.
  • Sarmale represent warmth, abundance, and togetherness, and many families proudly pass down their own versions through generations.
