Sauerbraten (German Pot Roast)

GermanyGermanMunich

If I had to choose one classic German dish, it would be Sauerbraten — a rich, slow-cooked roast famous for its deep flavor and tender meat.

It’s considered one of Germany’s national dishes and is especially popular in the Rhineland region.

Ingredients (Serves 4–6)

For the Marinade

  • 2 cups vinegar (red wine or apple vinegar)

  • 2 cups water

  • 1 onion (sliced)

  • 2 carrots (chopped)

  • Bay leaves

  • Peppercorns

  • Cloves

For the Roast

  • 1.5–2 kg beef roast

  • Salt & pepper

  • Butter or oil

For the Gravy

  • Marinade liquid

  • Ginger snaps or bread (for thickening)

  • Raisins (optional)

How to Make It

1. Marinate the Beef

  • Place beef in the marinade mixture

  • Refrigerate for 2–5 days

This gives the dish its famous tangy flavor

2. Brown the Meat

  • Remove beef from marinade

  • Pat dry and season

  • Sear in a hot pot until browned on all sides

Browning adds rich flavor

3. Slow Cook

  • Add some marinade and vegetables to the pot

  • Cover and simmer slowly for 2–3 hours

The meat becomes very tender

4. Make the Gravy

  • Remove meat

  • Strain sauce if desired

  • Add crushed ginger snaps to thicken

This creates a sweet-and-sour gravy

5. Serve

Best served with:

  • Dumplings

  • Red cabbage

  • Potatoes

Why It’s Special

  • Combines sweet, sour, and savory flavors

  • Slow cooking creates incredible tenderness

  • Represents traditional German comfort food
