Cabbage Rolls
A dish most Saskatchewan families cook is cabbage rolls. They are cabbage leaves stuffed with rice and meat. They are a potluck dish and a winter supper.
What you need
1 large head of cabbage
1 pound ground beef
1 cup cooked rice
1 onion, chopped
2 cloves garlic, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 can tomato sauce
1 can diced tomatoes
1 tablespoon oil

How to make it
Cut the core out of the cabbage. Place it in boiling water for a few minutes until the leaves soften.

Peel off 12 large leaves. Trim the thick centre rib of each one.
Mix the ground beef, rice, onion, garlic, salt, and pepper.

Put a spoon of the mixture on each leaf. Roll it up and tuck the sides in.

Heat the oil in a pan. Brown the rolls lightly on all sides.
Pour the tomato sauce and diced tomatoes over them in a baking dish.

Cover and bake at 350°F for about 90 minutes until the meat is cooked through.
Check halfway. Add a splash of water if the sauce looks dry.
Rest for 10 minutes before serving.
How it is served
It is a main dish with bread on the side.
Sour cream is optional on top.
One batch feeds a family and leaves leftovers.
They freeze well. They reheat in the oven the next day.
People bring them to potlucks in a covered dish.
