My Favorite Traditional Polish Recipe: Pierogi Ruskie
PolandPolishMinsk
My favorite Polish dish is Pierogi Ruskie (potato and cheese dumplings). Soft dough, creamy filling, fried onions on top.
Here is how it is been prepared.
1. Make the Dough
- Flour: 500g
- Warm water: 250ml
- Egg: 1
- Salt: 1 teaspoon
- Melted butter: 2 tablespoons
2. Make the Filling
- Potatoes: 500g (boiled and mashed)
- Farmer's cheese (twaróg): 250g
- Onion: 1 medium (fried until golden)
- Salt and pepper to taste
3. Fill and Seal
- Roll dough thinly (2-3mm)
- Cut circles (8cm diameter)
- Place 1 teaspoon filling in center
- Fold in half (half moon shape)
- Press edges firmly with fork
4. Cook and Serve
- Boil salted water in large pot
- Drop pierogi (cook 3-4 minutes until they float)
- Fry onion in butter until golden
- Pour over pierogi
- Serve with sour cream

Cultural Significance
- Pierogi Ruskie are one of Poland’s most beloved traditional dumplings. Despite the name, they are not Russian—“Ruskie” refers to Ruthenia, a historic region that includes parts of today’s Poland and Ukraine.
- The dish is considered classic Polish comfort food and is commonly served at family gatherings and, in many regions, during Wigilia (Christmas Eve dinner).
